Kid Friendly Shredded Beef Burritos

Raise your hand if you have a picky eater who will hardly touch beef? Don't give up as we have an idea for you! We understand that it's not always easy to get your kids to eat beef so we are continuing our kid-friendly beef recipes that are easy yet delicious.

We know that everyone is busy and has a hard time finding kid-friendly recipes to make. This is a convenient meal that could easily turn into a freezer meal. Roll up a few extra burritos, wrap in plastic wrap, put in a zip lock bag, pop them in the freezer and you have an easy freezer meal. All you have to do is grab one out of the freezer and microwave until warm. This is perfect when the kids are out of school this summer and you have no idea what to make them for lunch. How about a great meal to throw in your child's lunchbox or spouses lunchbox that they will enjoy? There are so many endless options when it comes to these beef and cheese burritos.

INGREDIENTS:

3 - 5 lbs Oak Barn Beef Roast

Can of Pinto Beans (you could us Black Beans)

Mexican Cheese Blend

Jar of Mild Salsa

Whole Wheat Tortillas

OTHER OPTIONAL INGREDIENTS:

Additional Salsa

Guacamole

Lettuce

Cilantro

STEP BY STEP INSTRUCTIONS:

  1. Put roast in crockpot on low for 8 hours with a jar of mild salsa. Once cooked, shred the roast with two forks.
  2. Drain pinto beans and cook on low to heat the beans in a pot on the stove.
  3. To assemble, placed desired portion of shredded beef, then pinto beans, then cheese. You can also add guacamole, lettuce, cilantro, etc. (depends on what your family likes) Roll each tortilla up into a burrito.

Serve with rice, a veggie, and a seasonal fruit. What a yummy, easy, and well balanced meal that kids will love!
