This casserole recipe from Taste of Home is AWESOME! We tried it last week and I knew that I needed to share it with you with just a few changes. Check it out!
Ingredients:- 1 lb Oak Barn Beef Ground Beef
- 1 medium onion, chopped
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup picante sauce
- 1/2 teaspoon taco seasoning
- 1 can (10-1/2 ounces) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
- 1 can (10 ounces) diced tomatoes and green chiles, undrained
- 1 can (4 ounces) chopped green chiles
- 1 package (9-3/4 ounces) nacho-flavored tortilla chips or plain tortilla chips, crushed
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- Optional: Cubed avocado and sour cream
- Highly recommend!
Instructions:
- Preheat your oven to 350. Lightly grease a 9 x 13 glass pan
- Cook the Oak Barn Beef Ground Beef and onions over medium heat until the beef is browned and is to 165 degrees Fahrenheit. Drain the grease then stir in beans, picante sauce and taco seasoning.
- In a separate bowl, mix the soup, tomatoes and green chiles.
- In the glass pan, layer half the chips, beef mixture, soup mix, and cheese. Repeat the layers until there is no more to add.
- Put in the oven uncovered for 15 minutes, or until the center is hot.
- Top with avocado and sour cream.
