Stuffed Peppers - Summertime Entertainment!

Stuffed Peppers is great for summertime and a fun one for kids! I'll never forget how excited I was when we had these for dinner. Bon Appetit!

Stuffed Peppers Recipe

Ingredients 

  • large bell peppers 
  • lb Ground Beef
  • 2 tbs chopped onion
  • cup cooked rice
  • 1 teaspoon salt
  • clove garlic, finely chopped
  • can tomato sauce
  • 3/4 cup shredded mozzarella cheese (3 oz)

Step By Step:

  1. Heat oven to 350°F.
  2. Cut thin slice from stem end of each bell pepper to remove top of pepper. Remove seeds and rinse the peppers.
  3. In a pan, add enough water to cover peppers. Heat to boiling; add peppers. Cook for about 2 minutes then drain.
  4. In skillet, cook ground beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef reaches an internal temperature of 160 degrees; drain the excess grease.
  5. Stir in rice, salt, garlic and 1 cup of the tomato sauce; cook until hot.
  6. Stuff peppers with beef mixture. Stand peppers upright in ungreased 8-inch square glass baking dish. Pour remaining tomato sauce over peppers.
  7. Cover tightly with foil. Bake 10 minutes. Uncover and bake about 15 minutes longer or until peppers are tender.
  8. Sprinkle with cheese.
  9. ENJOY!
