How to Easily Make a "Fall of the Bone" Beef Roast Dinner

This Slow Cooker Beef Roast Recipe will be your savior when you are limited on time and need a warm-up in the winter cold! As a college kid, I am all about ease, and a beef roast in one of the easiest, most delicious meals you can do.

INGREDIENTS:

One 3 - 5 lbs Roast Beef

3 tablespoons olive oil

2 whole onions, peeled and halved

6 whole carrots sliced into 2” pieces

3 cups beef broth

2 sprigs fresh rosemary

2 sprigs fresh thyme

Salt

Black Pepper

INSTRUCTIONS:

All ingredients are pretty common, and don’t require buying a lot of things that you won’t have around the house already. (Another thing a broke college kid appreciates!!) The rest is summed up into 6 easy steps:

  1. Season the roast with salt & pepper.

  2. Heat the olive oil on medium-high heat. Add the halved onions and carrots to the pot, browning them on both sides. Remove them and set aside on a plate.

  3. Add more olive oil to the pot. Sear the beef roast for a minute on all sides, or until it is brown all over. Remove the roast and cover with foil.

  4. Add beef broth (about 1 cup) scraping up the brown bits on the bottom. Place the roast and vegetables back into the pot (or a crock-pot) and add enough beef stock to cover the meat halfway.

  5. Add the fresh herbs and put the lid on.

  6. Cook on low-medium heat for 4-5 hours
