Dinner for 2: Beef Enchiladas
Recently, we've had a lot of requests for recipes for two people. This is the first of many to come!
This is an easy recipe for beef enchiladas, and Oak Barn Beef's best dry aged beef, ground beef is going to make it very delicious!
Here's what you'll need:
Ingredients:
- 1/2 lb ground beef
- 1 can mild enchilada sauce
- 3/4 cup black bean and corn salsa
- 1 cup shredded Mexican four-cheese blend
- 4 flour tortillas for burritos
- Chopped fresh cilantro, if desired
Steps:
- Heat oven to 350°F. Spray 8-inch Dish with cooking spray
- Cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until 165 degrees; drain. In medium bowl, mix cooked beef, 1/4 cup of the enchilada sauce, the salsa and 1/2 cup of the cheese.
- Divide beef mixture evenly among tortillas. Wrap tortillas around filling, and place in baking dish.
- Pour the remaining sauce over the tortillas, and top them with remaining 1/2 cup cheese. Cover dish with foil.
- Bake 35 to 40 minutes or thoroughly heated.
